Ginger Spice Pear Cake


Living in Oregon means we get a beautiful bounty of pears every summer. I have never seen so many different kinds of pears in my life, honestly! Although I only shared pictures of one kind in this post

They are incredibly delicious fresh… so sweet and watery that the juice just drips from your mouth as soon as you bite into them.

But because they are so plentiful we also have to come up with ways to use them so we not only eat with them, cook with them, and store them for the long winter. Between pear butter, dried pears, and canned pears it makes sense to bake with them too!

I had a couple that were starting to look quite sad and if you follow me on Instagram (@americanflavorlatinspice) you know how much I dislike throwing food away and will come up with ways to use it.

Like the english proverb “waste naught, want naught”.

We are incredibly blessed by God and he in return asks us to be good stewards of those blessings. So that meant for me getting creative in the kitchen!

We had a family dinner party to go to and I was in charge of dessert, so I decided to try to make a pear cake and use ginger as one of the spices. Yes, ginger, quite the controversy it created in my house! Who would have thought?! Although I can understand it, when someone throws the word ginger around specially in baking our first reaction is WHAT?! And then add pears to the mix… well I get why the looks I got but don’t let that psych you out of giving it a try, trust me!

We did get vanilla ice cream in case my experiment flopped and well it always goes good with cake anyways.

The house smelled like fall! And it matched the gray weather outside, even though it was not the traditional fall fog and rain but the smoke from the fires, it still made it easy for us to pretend and with that lifting our spirits . I was still not allowed to play Christmas music but that’s ok, dinner jazz worked just as well as the finishing touch of coziness.

And let me tell you the cake was a huge success Ginger and all! As you can tell from what was left of it and there were a few jokingly yet quite serious requests for it in the future.

So, without further adieu the time has come for me to share this amazing recipe with all of you and give you something that will elevate your fall baking and coziness to a whole new level!

Ingredients

  • 4 cups peeled, cored and chopped pears
  • 2 cups white sugar
  • 3 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 1 ½ teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • 4 large egg whites
  • ⅔ cup canola oil
  • 1 cup chopped walnuts or pecans

Directions

  • Combine the pears and the sugar and let stand for one hour or while you measure and prepare all the other ingredients.
  • Preheat oven to 325 degrees F (165 degrees C). Spray a 10 inch bundt pan with non-stick cooking spray.
  • Slightly beat the egg whites and combine them with the oil, chopped nuts and pear mixture.
  • Stir the flour, salt, baking soda, nutmeg, cinnamon and cloves.
  • Stir in the pear mixture.
  • Pour batter into the prepared bundt pan.
  • Bake at 325 degrees F (165 degrees C) for 1 hour and 10 minutes. Remove from oven ant let cool on a wire rack for 10 minutes before removing form pan.
